Today, Poinçon 22 takes a look at the 2022 version of the galette des rois.
The "Pécan" galette by Cedric Grolet
We start without further ado with the galette Pécan by Le Meurice pastry chef Cedric Grolet. A traditional galette in shape but surprising in taste. This year, say goodbye to frangipane and apple, and hello to pecan. Straight from the United States, pecans are combined in this galette with flaky brioche and almond cream.

The "Nutcracker" galette by Nina Métayer
This hazelnut frangipane-flavored galette des rois is inspired by Tchaikovsky's enchanting ballet. For this galette, Nina Métayer teamed up with her friend Alexia Lepelletier to make the crunchy tuile: the round dance at the end of the ballet, bringing together all the dancers. An invitation to share and enjoy being together.

The "paris brest pistache" galette by Christophe Michalak
A galette as astonishing visually as it is in taste: green, pistachio, Christophe Michalack dares to offer us a Paris Brest version of the galette des rois. An amandine cream, a crunchy crumble, praline and caramelized pistachio from Iran: enough to surprise your guests and add a touch of originality to Epiphany.

David Wesmaël's galette "glacé à flamber
Looking for a fresher taste? David Wesmaël innovates with a galette glacée. A frangipane almond-flavored ice cream and a two-apple sorbet are accompanied by a vanilla-glazed parfait and a pure almond macaroon cookie, all to be flambéed with an agricultural rum. You'll find all the hallmarks of the traditional galette des rois, except that it's iced.

The "Jardin de l'atlas" galette by Pierre HermÉ
Pierre Hermé, like an invitation to travel and escape, invites Morocco and orange blossom into the heart of our palates. In this revisited galette des rois, we find an almond cream with lemon, orange blossom and honey, nestled in a puff pastry decorated with an ice-cream rose.

The "112 nuances de coco" cake by nicolas guercio
The Lutetia's chef puts the spotlight on a surprising flavor for his galette: coconut. A flaky brioche containing an almond cream combined with coconut, accompanied by a chocolate mousse and a coconut ganache. All covered with a malibu glaze.

Chef Philippe Conticini has created a galette des rois that follows the rules of the art: Viennese puff pastry and rum-flavored almond frangipane. A generous, gourmet galette that's sure to please! Chef's tip: put your galette in the oven for ten minutes at 140 degrees to make it even more melt-in-your-mouth.

La galette des rois by Jeffrey Cagnes
For his first edition of the galette des rois, pastry chef Jeffrey Cagnes has created a galette on a traditional frangipane base embellished with a golden puff pastry. All encircled by crushed and roasted hazelnuts. Inside these galettes, you'll find made-to-measure fava beans by Vessel, a brand of French artisanal tableware.

La galette des rois by Michael Bartocetti
Introducing the George V's galette des rois, created by chef and puff pastry king Michael Bartocetti. Discover a perfectly executed crispy puff pastry containing a Cassia cinnamon frangipane that reveals tangy, spicy notes.

Brioche des rois by julien Alvarez
Discover the signature brioche by Julien Alvarez, head pastry chef at Ladurée. A brioche des rois with a hint of Italy; candied fruits such as orange, grapefruit and black grape. An orange and almond heart and a panettone macaroonade transport you to the shores of the Adriatic Sea.
